Third-generation pizzaiolo Ciro Salvo opened the original 50 Kalò in Naples in 2014, the London follow-up in 2018. Salvo’s pizza-making practice pushes hydration and fermentation to their limits to produce dough that has won him accolade after accolade. He pays attention to what goes on top too: think Campanian olive oil, organic San Marzano, Corbarino and Piennolo tomatoes or Ciauscolo spreadable salami from Le Marche.
