Segovia native Rubén Arnanz is the mastermind of this restaurant located in the food hall of the Galería Canalejas. Arnanz is on a mission to showcase the flavors of his native region, which he does in dishes like a white chocolate marshmallow with Ossetra caviar, revolconas potato with smoked egg yolk and crispy bacon or suckling lamb roasted in the wood oven and served in a corn husk. Don’t be put off by the food court setting. Ignore the table seating at the restaurant; grab a seat at the counter, and let Rubén do his thing.
