Bergamo native, Mario Gamba, opened Acquarello in 1994 with the idea of bringing Italian haute cuisine to Munich. His creations include tortelli with red prawns from Mazzara del Vallo with green apple, leek and curry sauce, wild Scottish salmon with cauliflower puree and a soy coriander sauce and braised beef in a Barolo sauce with celeriac purée. The sleek dining room is decorated with works by Italian artists. The wine list is superb, focusing on Italian classics from Piedmont and Tuscany, German Rieslings, and Burgundy.
