This is where you will find Massimiliano Poggi’s philologerudite take on the classic dishes of Bologna, aptly nicknamed La Grassa (“The Fat One”). Expect a very traditional, opulent green lasagna, the perfect nest of tagliatelle with ragu or the decadent cotoletta alla bolognese, served tall and on the bone, fried in butter and topped with slices of ham and cheese, before being  cooked in a little broth. This is one of the best expressions of traditional regional cuisine in Italy.
