One of the best trattorias in Italy, is located in what used to be a Medieval convent in Cetara, one of the lesser-known villages on the Amalfi coast. Here, chef and owner Pasquale Corrente offers a simple cuisine that makes the best of the products of the area, starting with colatura di alici, a pungent, powerful relish not unlike Vietnamese fish sauce; grilled fish from the Tirreno sea, pasta and extra-virgin olive oil. Ziti pasta with a tuna genovese (a Neapolitan sauce made traditionally with a lot of onions and a little meat) are a must.
