A stone's throw from one of Rome’s most beloved landmarks, the Trevi Fountain, Al Moro has been regaling his posh clientele with classics from the Roman tradition, washed down with some of most prestigious Italian wines, the names written in good calligraphy on the hand-written wine list. Newspapers clippings and yellowed photos of the VIPs crowd the wood-paneled dining room: but in Rome, the rich still like to eat what originated as poor man’s fare: expect dishes such as “Coratella” - the entrails of poultry, rabbit or lamb - Roman-style trippa (tripe), and coda (oxtail).
