Osteria Bottega is an institution in Bologna – la grassa (“the fat one”), as the city is nicknamed in Italy for the opulence of its cuisine. Which might be fat, yes, but still very much discerning. This is one of the best places for understanding what has made the region Emilia-Romagna the destination for food pilgrims around the world in recent years: the different aging of Parmigiano-Reggiano and aceto balsamico tradizionale, the redolent, glossy salumi and all the different shapes of tortelli and tortellini.
