For decades, Swiss fine dining meant French haute cuisine with a few regional flourishes. Andrea Caminada changed that when his refined alpine cuisine brought Switzerland into the modern era. The menu features the flavors of the Graubunden: pork, bacon, onion and dehydrated pear, trout with pickled carrots, smoked fish-bone reduction, carrot cream, and herbs and flowers and a stew of Chamois (a type of goat) with turnips and mushrooms. The wine list is exceptional, with deep selections from Burgundy and Bordeaux, complemented by Graubünden Pinot Noir and Swiss specialties.
