Why is this restaurant always filled with Madrid’s most passionate foodies? The Villalón brothers offer dishes based on the produce raised on their family’s farm, which they combine with an amazingly deep wine list; they also offer, in the restaurant’s basement, one of the city’s hippest cocktail bars. The dishes are traditional but modern in their approach; delicious tomatoes from their garden during the season are a must, and the hearty ratatouille is their best-selling dish. Given that many people are there to enjoy the wine list, many of the dishes are offered in raciones, smaller portions good for grazing.
