<p>On Galway’s west coast, chef JP McMahon demonstrates a radical commitment to using hyper-local and foraged ingredients. His New Irish cuisine is revealed in a 24-course tasting menu that draws on the rugged Connemara landscape featuring dishes based on kelp, oyster, potatoes, shrimp, eel, pigeon and beef, all sourced from within a radius that complies with McMahon’s stated mission. The minimalist dining room allows diners to focus on the food. The wine list highlights organic and biodynamic bottles from Europe.</p>
