Askua is the Madrid outpost of Ricardo Gadea's wonderful Valencian asador. Managed by his sons, - Nacho in the dining room, and Jorge behind the stove, - it has become, one of the best ambassadors of this style of cuisine in Madrid. Meats are supplied by Cárnicas Luismi, which might explain why their steak tartare sandwich is a favorite with the city's gourmands. And you shouldn't miss the kokotas (hake cheeks), which are griddled, as well as grilled. Personalized service completes the experience.
