Twenty-seven year old Carlos Casillas is one of Spain's most exciting young culinary talents. After studying at the Basque Culinary Center and working at some of Spain’s top restaurants, he returned home and opened this restaurant in a beautifully restored 19th-century flour warehouse. Signature dishes highlight heritage grains, wild herbs, seasonal vegetables, river fish, and locally raised meats. The striking dining room features an open kitchen overlooking the historic city walls. The carefully curated wine list emphasizes Cebreros, Castilla y León, and outstanding Spanish producers, complemented by select international wines.
