This historic Maison is where Bernard Loiseau developed a lighter style of French cuisine using the natural juices of vegetables and meats in the place of heavy sauces. Patrick Bertron continues Loisseau’s legacy with terroir-driven dishes featuring signatures that include frog’s legs with garlic purée and parsley juice, squab and cabbage stuffed with foie gras and milk-fed lamb chops with a reduced jus. The wine list is Burgundy-focused, with Montrachet whites, Côte de Nuits reds, and extensive vintages, balanced by Rhône and Bordeaux.
