Bill’s

Bill’s started life as a greengrocers in Lewes in Sussex, until founder Bill Collison added a restaurant in 2001 and branched out to Brighton in 2005. Everything changed in 2008, when über-restaurateur Richard Caring got involved and rolled Bill’s out nationwide. Now with around 50 sites, Bill’s is best known for breakfasts – buttermilk pancakes, eggs Benedict, etc. – and crowd-pleasing steaks, salads and indulgent puddings.
