The cellar, which covers mostly Spanish and French wines, holds around 1,300 different selections. And if you still can't find something to choose, Andrés Conde, the third generation running the restaurant and a walking wine encyclopedia, might offer you something from the 300-400 bottles not on the list. The traditional Cantabrian cuisine relies on quality fish, meats and sausages that are mixed with vegetables and seasonal products.
