This legendary establishment, which opened in 1892 and is decorated with old posters, is not very well known outside of Madrid. But day after day, local food lovers stand elbow to elbow at the bar feasting on croquettes, their famous tortilla skewer, gildas (a toothpick holding an olive, Guindilla pepper and anchovy), salmorejo (a purée of tomato, bread and garlic) and tins of conserved fish. For those who want something heartier, they also offer a delicious morcilla (blood sausage) and cecina (dried beef). Most people drink beer or vermouth, which is served straight from the barrel.
