According to Guinness Book of World Records, Casa Botín, founded in 1725, is the oldest restaurant in the world. Run by the third generation of the González family, its two specialties continue to be the delicious Segovian suckling pig and lamb roasted in the Castilian style. An oak-filled oven that has been in constant service since the opening of the restaurant renders each piece to perfection under the watchful eye of the roasting masters. The rest of the offerings are in keeping with the classic spirit of the house.
