Located in Limburg’s hills in the medieval village of ReijmerstoIn, Brut 172 gets its name from being housed in a former farmhouse that is 172 meters above sea level. Hans van Wolde’s philosophy is immersive storytelling through food, blending theatrical design with expressive cuisine. Dishes include Hans’ classic onion tarte tatin with asparagus and Kampot pepper and Limburg trout with North Sea crab, Alaskan King crab, daikon radish and passionfruit. The wine list is ambitious, showcasing French prestige regions, German Rieslings, and Dutch vintners.
