Long before the new wave of modern Spanish restaurants (Brat, Barrafina) opened, there was Kensington’s Cambio de Tercio, which has been dishing up playful gastronomic takes on patatas bravas (“the new way”) and tortillas since 1995. Chef Alberto Criado has a knack for knowing when to keep it traditional, as with tuna tartar ajo blanco or Galician beef rib, and when to launch an El Bulli-ish attack on that tradition: pairing pluma iberica with roasted pineapple or offering croquetas of salmon nigiri.
