This is Andreas Caminada’s more rustic counterpart to his fine dining restaurant, Schloss Schauenstein. The philosophy is rooted in heritage: honest cuisine using local Graubünden produce finished with a chef’s touch. Dishes include lightly cooked trout with kohlrabi and dill vinaigrette, maluns, a traditional dish from the region of buttery potato niblets served with cheese and apple and saddle of venison served with celery, chanterelles and pear. The wine list highlights Swiss vineyards, particularly Graubünden Pinot Noir, alongside approachable European labels.
