The management of the Eurostar Hotel chain gave Aitor Arregui, the patron of the magnificent Basque restaurant Elkano, the choice of opening a restaurant in any location in Spain. He chose the Andalusian province of Cadiz, on the theory that serving fish that swim in the warmer waters of the Mediterranean would be a good contrast to the cold-water fish he serves at Elkano. The cooking method – on an asador over coals – is the same but applied to the highest-quality gambas de Huelva, langoustine from Sanlucar and locally caught fish such as sea bream and rockfish.
