Central Bar by Ricard Camarena

This long, rectangular bar that seats a few dozen people is located in the Central Market of Valencia. The quirky cuisine was designed by highly awarded chef Ricard Camarena; the menu is filled with his personal takes on classic Spanish tapas and small plates. In particular, there are three sandwiches served on baguettes that are popular: “Ricard Camarena” with pork loin, onion, mustard and cheese, “Mary” with cuttlefish and aioli and “Canalla” with black pudding, scrambled eggs and pickled pepper.
