This unique, cosmopolitan space specializes in serving a Japanese version of Chinese cuisine. The menu offers bao buns, gyoza with many interesting fillings and a handful of dishes like barbecued Iberian pork with acidified apple and spicy mustard or beef shank with ginger and scallion in a poblano pepper sauce. But the main events are the three types of ramen on offer, made from pork bones and miso that has been simmered for 24 hours.
