In 2023, after spending 40 years in this kitchen that overlooks the Yonne River, Jean-Michel Lorain passed the responsibility of running the restaurant to his nephew, Alexandre Bondoux. Signature dishes include the classic oyster terrine with shallot confit and red wine gelée, smoked filet of pollack in white wine sauce and Bresse hen steamed in Champagne and black pudding. Wines lean heavily into Burgundy’s grands crus, supported by Loire freshness and Rhône depth. A warm, refined atmosphere where culinary heritage and Burgundian terroir are honored in every course.
