Coya

Sanjay Dwivedi left Kensington’s high-end Indian restaurant Zaika in 2012 to go on a year-long tour of Latin America, spending time in the kitchen of Peru’s legendary Gastón Acurio. The menu at Coya is the result. Dishes like soy sauce–pimped ceviche, a tiradito of yellowtail with green chili and daikon radish, ox heart anticuchos, Chilean sea bass and wagyu bao reflect the fusion of Japanese, Chinese, Spanish and African cuisine that make up Peruvian gastronomy.
