Paulo Airaudo is as busy as he is ambitious. After Amelia, his award-winning restaurant, moved to the Villa Favorita Hotel on San Sebastián’s La Concha Beach, he repurposed the space into this modern trattoria. Head chef Gabriele Palazzi offers a menu of reinterpreted Italian classics such as vitello tonnato, tagliolini with squid ink or seafood and risotto with pumpkin and coffee, a nod to Le Calandre’s Massimiliano Alajmo. Mains include bacalao in a bañacauda sauce with finger lime and Swiss chard or pigeon with eggplant and yogurt
