Having relocated from Zuidwolde to an old Saxon farmhouse in Staphorst, complete with its own windmill for grinding grain to make homemade bread, chef Jarno Eggen continues his philosophy of combining craftsmanship, elegance, and a commitment to local products. Dishes include risotto and beetroot with apple, currants and crème fraiche, sea bass with celeriac and black winter truffle and roe deer with homemade puff pastry and various preparations of pumpkin. The wine list is curated with sophistication, highlighting French classics, German Rieslings, and artisanal producers.
