De Leuf, in Limburg, is rooted in history. Located in a historic, half-timbered farmhouse that was originally built in 1769. It was opened as a restaurant in 1988 by Paul and Sandra van de Brunt. Today, Paul’s son Robin leads the kitchen whose menu features steak tartare with wasabi, ponzu and Imperial heritage caviar, monkfish with Jerusalem artichoke, lardo and katsobushi and ribeye with aubergine, soy sauce and black pepper. The wine list is classically European, with Burgundy, Bordeaux, and German Rieslings well represented, complemented by Dutch vintners.
