In the Stavros Niarchos Foundation Cultural Center, George Papazacharias crafet one of Greece’s most avant-garde dining experiences. The tasting menu emphasizes sustainability, fermentation and local foraging, blending Greek cooking with Nordic influences. Signature dishes include corn with buckwheat koji, aged corn cream, seaweed oil, and aged pear, sweetbreads with fermented cherry and saffron and modern Galaktoboureko crispy sea lettuce instead of the traditional filo dough. The striking glass-walled space overlooks sea and city. The wine list is progressive, with Greek naturals, European biodynamics, and Champagne growers.
