Set among vineyards outside of Geneva, Philippe Chevrier serves a highly refined, French cuisine. Dishes include a soft-boiled egg in a green sorrel coat, fricassée of porcini, Swiss chard, roasted hazelnuts and poultry jus or flame-seared langoustine tartare with green bean salad, coconut cream with lemon and ginger and grilled Adret lamb chops, spiced confit leg, stuffed baby vegetables, red pepper coulis and rosemary-infused lamb jus. The wine list is extraordinary, with a focus on Swiss vineyards (particularly Geneva appellations) alongside Burgundy, Bordeaux, and Rhône selections.
