The stunning timballo del gattopardo, described by Tomasi di Lampedusa in his novel The Leopard, is a perfect representation of Ciccio Sultano’s approach to Sicilian cooking. There’s lot of baroque infliuence in Sultano’s cuisine, and it is not unusual to find ingredients that wouldn’t seem to work together living in harmony. The eclectic nature of the cuisine lends itself nicely to the tasting menu, which includes dishes such as spaghetti in Taratatà Moorish sauce, affording Sultano the opportunity to demonstrate his craft. A large and very deep wine list augments the cuisine.
