Traditional Roman food is based on produce from the Lazio countryside, cheap cuts of meat (lots of offal), sheep’s cheese and lots of fried dishes. Velavevodetto (“I told you so”) is one of the most honest (and delicious) places to try homemade versions of these specialties. Porchetta, Roman-style tripe, chicken with bell peppers or, obviously, the holy trinity of Roman pastas: amatriciana, carbonara and cacio e pepe. The original location on Mount Testaccio was so popular that they opened a second branch in the upscale neighborhood of Prati.
