At the Grand Hotel Heiligendamm on the Baltic coast, Ronny Siewert uses the best ingredients from the Northern German terroir to present French-inspired haute cuisine. Baltic seafood appears in dishes like Müritz perch with chanterelles, white onion cream and beurre rouge and Hummersamtsuppe à la Escoffier, velvet-smooth lobster soup served with truffle cream, cauliflower, tarragon, and fennel. There is also black-feathered chicken with sauce Choron and caramelized Roscoff onions. The wine list is excellent, with German Rieslings, Burgundy, Bordeaux, and Champagne
