Gagini

Located in a working-class neighborhood of Palermo known as Vucciria, Gagini is named after the greatest sculptor of the Sicilian Renaissance, Antonello Gagini, who had his workshop there. Brazilian-born Mauricio Zillo went deep into researching the historical ingredients of the region, and the results are inventive dishes such as beef diaphragm, Madonie snails, Nubia garlic and cucunci (caperberries) or spaghetti with Trunzo cabbage from Acireale, Pizzutello tomato from the Ericine Valley and sea urchins.
