It wouldn’t be fair to describe Giolina’s pizza as “gourmet”; rather, the pizzeria opened in Milan in 2020 by Ilaria Puddu and her associate Stefano Saturnino is just great pizza. Neapolitan in style, with carefully sourced ingredients from southern Italy – from the Casa Marazzo tomatoes to the mozzarella of celebrated producer Barlotti and cured meats by the Salumificio Santoro in Martina Franca. The pizzas are inventive without going overboard: take the Giolina, a sort of reverse Parmigiana di Melanzane with violet eggplant purée, smoked provola, cherry tomatoes, baked aubergines, 36-month Parmigiano-Reggiano wafers and fried basil.
