Serving super-luxe Cantonese and dim sum since 2001, Hakkasan now has two London locations, Hanway Place and Mayfair, and thirteen worldwide. Serial restaurateur Alan Yau discovered executive chef Tong Chee Hwee while the latter was working at the Ritz-Carlton in Singapore. Hwee, who trained under the legendary Cheng Hon Chau, fuses Cantonese classics with outrageously opulent ingredients: Peking duck that can be ordered with a variety of caviars, dumplings filled with lobster and topped with gold leaf and charcoal-grilled wagyu beef with sake and black truffle honey.
