<p>Located a mere 90 minutes from the Italian border, Ana Roš and her husband, Valter Kramer, have made visiting their restaurant mandatory for serious diners.  The cuisine expresses the terroir of the Soča Valley in avant-garde tasting menus. Dish include corn beignet with fermented cottage cheese and trout roe, hibachi grilled Soča Valley trout with brown butter fish sauce and horse radish and roebuck with oyster emulsion and kiwi. The wine list, curated by sommelier Valter Kramar, is legendary, focusing on natural and biodynamic Slovenian producers alongside international icons.</p>
