Arte bianca – the “white art,” as bread- and pizza-making are called in Italy – used to be pretty low tech: just a set of hands and a wood-fired oven. How the times have changed: Francesco (Sasà) Martucci’s lab in Caserta has all sorts of modernist appliances, including blast chillers and freeze dryers. The results are avant-garde pizzas such as 4 tomatoes in 3 textures: semi-dried cherry tomatoes, yellow and red confit datterini tomatoes, mozzarella and raw tomato once out of the oven. The dough undergoes a very long fermentation, resulting in a pizza so light, soft and elastic, it almost feels weightless.
