Il Marin, named after the wind blowing toward the Ligurian shore, occupies a beautiful dining room overlooking the Ancient Port of Genoa, redesigned by celebrity architect Renzo Piano. Chef Marco Visciola, a native of the nearby village of Bogliasco, has a soft spot in his heart for the humble fish of the Ligurian Sea. Among his signature dishes is a finanziera; in the Langhe region, it is made with offal, here with fish entrails. More recently, Visciola has been mastering the dry-aging of fish: he’s now producing seafood cured meats and even a fish cotechino.
