When the late Gualtiero Marchesi was asked who was the most talented of the young chefs who trained in his kitchen, he would always name Paolo Lopriore. Though soft-spoken and mild-mannered, Lopriore made a name for himself at a luxury resort in Tuscany, where the bitterness found in his cuisine proved so disconcerting that a number of guests submitted letters of protests. He’s now cooking at the lovely Il Portico, where his mom runs the service, and where he serves a tiny menu that relies on local ingredients and on the catch of the day from nearby Lake Como.
