Julián de Tolosa

One would think that the asador, so important to the cuisine of the Basque region, would be easily transportable. Yet finding a good one in other parts of Spain can be difficult. Casa Julien of Tolosa, an extension of the iconic Casa Julien, is as close to an exemplar as they come. The menu is somewhat more extensive than the parent’s; along with huge hunks of beef, you will also find Tolosa-style red beans, grilled monkfish in the style of Orio and fried hake. Don’t forget the piquillo peppers and the baked mushrooms with an egg yolk.
