<p>Opened in 2013 by restaurateur Dmytro Borysov, Kanapa became a pioneer of Ukraine's modern gastronomic movement by reimagining pre-revolutionary Ukrainian recipes through contemporary techniques and presentations. Set in a beautifully restored historic building on Andriivskyi Descent, the restaurant showcases seasonal local ingredients in dishes such as borscht with smoked pear, varenyky, pike caviar, duck with cherry sauce, and slow-cooked lamb, often incorporating elements of molecular gastronomy. A wood-fired oven, extensive selection of Ukrainian wines, house-made infusions, and elegant dining rooms overlooking Kyiv's historic quarter complete the experience.</p>
