The Lallement family opened this hotel/restaurant, with its stylish modern dining room, in 1986. Arnaud Lallement, the son of the founders, took charge of the kitchen in 2002, with the goal of elevating the terroir of the Champagne region. Signature dishes include langoustine Royale (named for the regal size specimens Arnaud serves), blue lobster with caviar and warm potato foam and pigeon breast with foie gras and spinach. The wine list is extraordinary, naturally focused on Champagne houses and grower-producers, complemented by Burgundy and Bordeaux.
