Jean-Yves Guého is the chef and owner of L'Atlantide. A native of Brittany, he worked in New Orleans and Hong Kong before returning to France. His cuisine is inspired by his travels, but firmly rooted in French tradition. His menu offers roasted line-caught sea bass with caviar potatoes and lemon condiment and young pigeon breast cooked with lobster in a cabbage leaf. The wine list highlights Loire Valley wines—Muscadet, Sancerre, Vouvray—balanced by Burgundy whites, Bordeaux reds, and Champagne.
