Taking the unique ingredients found on and around the island, he creates masterpieces like smoked mackerel with beetroot confit, La Bonnotte potato turned into foams, ice cream, chips and a warm purée, and the signature Oyster Erika, a black oyster on a white plate that was inspired by the 1999 oil tanker disaster.
