This is not just any piola (“trattoria” in the dialect of Piedmont) but “the” piola, run by the Ceretto family, who own the revered Piazza Duomo. Here the culinary tradition of the Langhe region is spelled out on a blackboard listing the often-changing menu. Every moment of the year offers perfect agnolotti del plin and the classic insalata russa with tuna mayonnaise. October through January is a particularly busy time, when shaved white truffles are served atop veal tartare or a cocotte with soft egg and potato cream.
