Founded in 1839, this icon of the Madrid dining scene is now run by the Pescaderías Coruñesas Group (Desde 1911, O’Pazo, Filandón, El Pescador). Like other places that date from prior centuries, it is partly a museum as well as a place to enjoy a meal. The recipes are legendary: croquettes, a simple bowl of consommé, Russian salad with sea bass, beef Wellington, cocido (chickpea and meat stew) and the most famous ice cream soufflé in Spain. The dining room retains the original décor, which has been restored to perfection.
