This sleek restaurant and cocktail bar is located inside a wonderfully restored Florentine palace, which at some point in history was a residence for the Medici. The temptation to include references to the Divine Comedy was impossible to resist, and the tasting menus are called Salvation (five dishes) and Sin (seven dishes). Diners will encounter wildly inventive names, such as Flying Saucers and Vegetable Porchetta, for a pasta with broccoli, citron and candied chili peppers, and a vegetable roll with green apple, beetroot and mushroom, respectively. Chef Simone Caponnetto prefers a flavor profile that is quite traditional – in the best way.
