Trained at the jegendary Locanda dell’Angelo in Ameglia, Simone Lugoboni learned there the lesson of ingredient-driven cuisine being the height of refinement. L’Oste Scuro (“The Dark Innkeeper”) opened in 1998 and has been one of the best fish restaurants in Italy ever since. While some of the dishes are purely about sourcing – like the lavish plateau royal of raw langoustines, purple prawns and carpaccios of fish – Lugoboni also turns out creations such as silver bass, lentil cream with laurel, baby spinach, carrot chutney and fried caper or blue lobster, cabbage, endive, wakame seaweed oil and caper leaf.
