His tasting menu features pristine seafood, like a dish of langoustine takoyaki with kohlrabi and tomato, Vitello Bonito, his whimsical take on Vitello Tomato served with pointed cabbage, wasabi and basil and meat dishes like pork jowl with yuzu, ginger and daikon. The polished service and wine program, overseen by sommelier Robert Jankowski, complements the cuisine with thoughtful pairings.
